My research explores how advanced food processing technologies can make our food safer, more sustainable, and more nutritious. I am particularly interested in the use of artificial intelligence and sensor technologies to improve food quality and reduce waste. My research integrates engineering, computational modeling, and biological sciences to solve complex problems in food systems. I am particularly interested in how AI-driven analytics and emerging sensor platforms can be used across agriculture, nutrition, and public health domains. The other aspect of my research explores novel methods that add value to underutilized grains and food processing byproducts.
Future work in my lab is moving toward developing real-time, AI-assisted monitoring systems for food safety and quality. And sustainable conversion of food waste to high value products. This includes scalable, low-cost technologies that can be applied both in advanced industrial settings and in resource-limited regions worldwide.
